Ingredients

Serves : 4
  • 4 eggs


  • 1/4 cup mizithra cheese


  • 4 sundried tomatoes


  • 2 tbs feta cheese


  • 4 leafs of spinache


  • 1 pinch of salt and pepper


  • 1 small green onion

Directions

  • Mix eggs and mizithra cheese together
  • Add to pan
  • Dice tomatoes and spinach and add to pan
  • Add other ingredients. May add olives or sausage chunks if desired
  • Cover and cook on low or simmer for 10 minutes
